Easy American Pancakes.. they’re also Gluten Free!

Pancake day is one of those great days because you can legitimately eat breakfast food for dinner. These pancakes are pretty healthy as they go, they are dairy and gluten free and provide one of your five a day. They aren’t the traditional crepey numbers your normally have on pancake day, these are more substantial American style fluffy stacking pancakes and take just a few minutes to make. This super easy little pancake recipe is from the Lisette Loves archives so I hope you enjoy!

Ingredients

– 2 eggs
– 1-2 bananas
– 2 tsps cinnamon
– 1/4 tsp baking powder
– handful of blueberries
– drizzle of syrup or honey

HOW TO:

  1. Mash up the bananas and mix together with the egg, cinnamon and baking powder. I personally use my trusted Nutri Bullet because it’s quicker and easier than a fork – I just throw all the ingredients in together
  2. Add the batter to a hot pan – I put a little coconut oil into the pan to stop it sticking – and cook until brown on each side
  3. Then tuck in.. it really is ridiculously simple, it tastes so wonderful and I didn’t even feel guilty because it was almost healthy!
