Here we have my seasonal take on the Mojito with a super easy cherry and mint mojito which is perfect for the weekend. This is going to be my go-to at the moment as I picked up a HUGE bag of cherries from my local market and they were super cheap as they are in season right now.
Mojitos are one of the simplest cocktails to make because they don’t require any cocktail making gear. These cherry and mint mojitos are super easy to drink and you can make as sweet or sour as you like. You will only need a few ingredients
- Mint leaves (4 per person)
- Chopped cherries (4 per person – or fewer if you want it less sweet)
- 1-2 tsps of sugar (I prefer to use brown sugar)
- Juice of 1 lime
- Crushed or cubed ice
- 1 part white rum
- 2 parts soda water
- For garnish slices of lime + halved cherries
The reason I don’t give ml specific measurements is because it allows you to scale up or down the recipe based regardless of the size of the glass or pitched you’re using.
First up chop up some cherries and add them into the glass with the sugar, lime juice and mint leaves. This is the important part – I think the terminology is ‘muddling’ you mash up the three ingredients so that the mint released it’s full flavour and it crushed the cherries to product the desired pink colour.
Then add in the crushed or cubed ice, pour over 1 part white rum and then top up with soda water.
