Baked mini doughnuts WITH a blueberry glaze

Now I can never resist the allure of a Krispy Kreme or even a Dunkin’ Donut but it’s not something I’ve ever attempted to make at home because let’s face it… pan of boiling oil… I’d either spill it or set my kitchen on fire. So I decided to try my hand at some baked doughnuts on a whim – I found this mini doughnut pan and got it delivered later that day- ready for my experiment.

  1. Sift and weigh the flour, baking powder and cinnamon and add the sugar
  2. Melt the butter, add to the milk egg and vanilla essence gradually
  3. Mix with an electrical whisk until thick and airy
  4. Fill a piping bag with the mix
    If you don’t have a piping bag, place a sanwhich bag into a mug, fill with mix, knot the open end of the bag and snip open a corner to create a makeshift piping bag
  5. Spray the doughnut mold with a low calorie cooking spray
  6. Pipe the mix into the molds 3/4’s of the way up
  7. Place in an oven at 180 degrees for 5-8 minutes, I found 7 minutes to be perfect
  8. Leave to cool on a wire rack
  9. For the glaze boil the blueberries in a little water to create a dark purple liquid
  10. Add the blueberry juice to the icing sugar a little at the time the thickness of the glaze is very much trial and error. Around 200g to 2-3 tbsp of blueberry juice. Dip into the glaze and leave to dry


For THE doughnuts:

  • 120g plain flour
  • 65g granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 100ml milk
  • 30g unsalted butter
  • 1 egg
  • 1 tsp vanilla extract

For THE glaze:

  • 1 handful of blueberries
  • Water
  • 500g+ icing sugar
