Baked apples stuffed with raisins

Baked apples stuffed with honeyed raisins and cashews is a really quick, easy and relatively healthy treat to make for breakfast, lunch or desert. It only takes about 20 minutes, it’s really cheap doesn’t require any particular culinary skills.

You Will Need

  • 1 tsp coconut oil
  • 1 handful of raisins
  • 1 handful of chopped cashew nuts
  • 1 tsp honey
  • 1/2 tsp cinnamon
  • 1 apple

How to make it:

  1. Pre-heat the oven to 180 degrees
  2. Melt the coconut oil with the cinnamon and honey
  3. Mix the raisins and chopped cashews with the melted coconut oil
  4. Scoop out the top of the apple with a tea spoon
  5. Stuff the raisin mix into the top of the apple
  6. Place in the oven and bake for 20 minutes or until golden brown
  7. Drizzle with honey and serve warm
