I spotted these Madeleine Shaw gluten free chocolate chip cookies over on Vivianna Does Makeup – ordered the book and ingredients to be delivered the same day. These were wolfed down by my colleagues on the test run so I baked a new batch on Saturday morning… by Sunday afternoon they were all gone!

Possibly my favourite thing about this cookie recipe – and about Madeleine’s book on the whole – is that it’s super quick and easy to make. The ingredients can be a bit hard to find in Tesco so I picked up mine from Amazon. Head over to Madeleine’s website if you want some more food inspiration – warning – it WILL make you hungry.

  1. Pre-heat the oven 160 degrees and line 2 baking trays with baking parchment or greaseproof paper
  2. Cream the butter and coconut sugar in the food processor
  3. Add in the egg and vanilla – blitz
  4. Pop in the flour and baking powder with a pinch of salt – blitz
  5. Break up the chocolate into rough chunks – blitz
  6. Put the mix into the fridge for 30 mins (I find it easier to handle cold)
  7. Roll the mix into ping pong sized balls and place onto a baking tray (I cooked 4 at a time because they spread)
  8. Bake for 12 minutes
  9. Take out and leave to cool by taking the parchment off the tray and placing on a wire rack (otherwise they will continue to cook)
  10. Leave to cool and firm up
  11. Serve with milk and enjoy!
