Recipe for Vegan Pesto with Walnuts & Avocado

This is one of the quickest, easiest and tastiest pasta dishes in my repertoire. Whilst I’m not a vegan myself I have a few friends who are and coming up with recipes that keep everyone happy aren’t always the easiest. This recipe is also one of the quickest – all you really need is a food processor/blender.

Walnut Pesto

you will need:
  • 1 large avocado
  • 2 tbsp olive oil
  • 2 handfuls¬†of walnuts
  • 1 bunch of basil
  • Juice of half a lemon
  • Ground pepper & sea salt
  • 1 clove of garlic
how to make it – serves 2
  1. Cut up the avocado – I use my trusty avocado sliver which my housemate picked up for me
  2. Add the avocado, oil, nuts, basil, garlic, salt and pepper into a blender
  3. Blitz in the food processor until smooth
  4. Add the lemon juice a little at a time until the mix loosens into a creamy smooth sauce
  5. Cook some pasta/spaghetti (vegan, fresh or dried) in lightly salted walter
  6. Drain the pasta and add back into the saucepan
  7. Turn on a low heat and add the pesto mix and heat until warmed
  8. Serve with cherry tomatoes on top for added sweetness
